Ingredients
2-3 zucchini's
1 pound extra lean ground beef
1/2 onion, chopped
2-3 garlic cloves, minced
2/3 cup ricotta cheese
2/3 cup parmesan cheese
1/4 cup of breadcrumbs
1 can diced tomatoes
Salt and pepper
Oregano
Fresh basil
Directions
Preheat oven to 350.
To make the zucchini slices that will act as the noodle in your lasagna, cut both ends off the zucchini and slice it in half lengthwise. With the inside of the zucchini facing up, use a vegetable peeler starting at one end and thinly start peeling all the way down the zucchini. You will get thin zucchini pieces, don't worry if some break or don't come out fully - you will still be able to use them. Do this with 2-3 zucchinis.
To make the meat filling, sauté 1/4 onion and 1 garlic clove in a pan with olive oil. Once translucent add the ground beef and season with salt and pepper. Once half cooked, add ricotta and 1/3 of a cup of parmesan and the breadcrumbs. Continue to simmer until meat is fully cooked.
While meat is cooking, to make the sauce start sautéing 2 cloves of garlic and the other 1/4 onion chopped in a pot. Using a handblender, blend the diced tomatoes in their can until pureed and add to the pot. Add salt, pepper, oregano and fresh basil and let simmer while meat cooks.
Using a 9x9 inch pan, place a thin layer of sauce at the bottom just to cover the pan slightly. Start placing the zucchini slices on the bottom of the pan, overlapping. Then top with a layer of meat, add some spoonfuls of sauce around the top of the meat. If you have leftover ricotta from its container, you can add some spoonfuls on top as well. Then top with another layer of zucchini slices. Continue to do this until you reach the top of the pan. Then once you reach the top of the pan with a layer of zucchini, add sauce and parmesan cheese to the top of the lasagna.
Cover with aluminum foil and bake at 350 for 20- 30 mins. It does not need much time as the zucchini slices will be very thin and the meat is already cooked.
*Note: This will come out a bit watery. Let cool before serving and once it has spent some time in the refrigerator it will stick together better and lose some water.
