An easy family dinner is a classic chicken dinner. Make sure you have time to prepare this in advance because letting the rub marinate on the chicken can add so much extra flavour!
Ingredients:
Rub:
1 tablespoon fresh thyme, chopped
1 tablespoon fresh rosemary, chopped
1 garlic clove, minced
1/2 teaspoon smoked paprika
Zest of half a lemon + 1 tablespoon lemon juice
2 tablespoons coconut oil, melted
Inside:
1 onion
3 garlic cloves
2 sprigs fresh rosemary
3 - 4 sprigs fresh thyme
Directions:
Combine all the rub ingredients in a medium bowl with a whisk. Using your hands, put the rub all over and under the skin of the chicken. Cover the chicken and let sit for 12-24 hours in the fridge.
Preheat oven to 400 F. Place your chicken in a roasting pan and stuff with the onion, garlic, rosemary and thyme. Cover with tin foil and bake according to the size of your chicken. My chicken was 5.36 pounds, so I baked mine for 1.5 hours and removed foil, then continued cooking for another 30 minutes without the foil. Broil for 3-4 minutes to brown.
Remove from oven and let sit for 20 minutes to set with all of the juices. Carve & serve with your favourite sides.
