Add this delicious, easy, high protein, quiche to your weekly meal prep rotation.
Ingredients:
1/2 yellow onion, diced
6 cups of baby spinach
4 whole eggs
320g egg whites
500g 1% cottage cheese
50g aged white cheddar cheese, shredded
1 teaspoon garlic powder
1 teaspoon onion powder
1/4 teaspoon smoked paprika
1/4 teaspoon dried oregano
Directions:
In a non stick skillet, or with a teaspoon-tablespoon of olive oil, sauté onion & spinach until spinach is wilted.
Whisk eggs, add cottage cheese, cheddar cheese and spices. Stir until fully combined. Stir in onions and spinach.
Poor into a medium sized baking dish 9x12 ish. Bake at 400 for 35-40 min.
Enjoy for breakfast, lunch or dinner!
** Fell free to mix in any of your favourite vegetables, I personally love to add in mushrooms or swap spinach for kale (whatever I have in my fridge that week).
