This chicken is extremely easy to make, with a fancy flair!
Sometimes chicken can be boring. I eat chicken frequently because it’s one of my go to foods for lean protein. This is when I crave stuffed chicken. This chicken dish was inspired by the needs of a romantic dinner for Valentines and something my husband would enjoy too (he loves roasted red peppers). This dish is super simple, yummy and filling.
Ingredients
4 boneless skinless chicken breast
Soft goat cheese
12 roasted red peppers (from a jar)
16-20 spinach leaves
2 teaspoons Italian seasoning
1 tablespoon olive oil
Directions
Preheat oven to 350.
Make a pocket in each chicken breast using a knife. Make sure you’re very careful and place 1 hand on top of the chicken incase you cut through.
Cut four (1-1.5 inch thick) pieces of goat cheese from the tube. Place one piece into each of the chicken breasts followed by three pieces of peppers each and four to five spinach leaves. Don’t be afraid to stuff the chicken tightly and push the vegetables right into the cheese for extra support. Sprinkle each chicken breast with Italian seasoning and use a toothpick to help secure the stuffing. Set the chicken aside.
Heat 1 tablespoon of olive oil in a cast iron skillet or an oven safe pan. Add chicken breasts and carefully brown each side (approx. 2 min per side). Remove from stove and place into the oven for 15 -20 miutes. Making sure the chicken is fully cooked through, use a meat thermometer or check for no pink.
Remove from the oven, and enjoy warm!
**Recommend pairing with lemon garlic roasted asparagus and purée cauliflower.
