Ingredients
1 pound ground turkey
1 tablespoon olive oil
1 yellow onion
1 small/medium sweet potato
2 sweet peppers (yellow, orange or red)
1 garlic clove, minced
1 5.5 ounces (156ml) can tomato paste
1 19 ounces (540ml) canned white kidney beans
1 19 ounces (540ml) canned dark red kidney beans
1 28 ounces (796ml) canned diced tomatoes
1 650 milliletre jar fire roasted tomato sauce (I use PC)
2-3 cups chopped kale (stems removed)
2 1/2 tablespoon chili powder
1 teaspoon garlic powder
¼ teaspoon paprika
¼ teaspoon cumin
Salt and pepper to taste
Directions
Heat olive oil in a large pot over medium heat.
Add the onion and minced garlic, stir until fragrant, approx. 2 min. Add ground turkey and 2 tbsp. of chili powder and sauté until the meat is browned. Add tomato paste, and stir into ground turkey mixture, cook for approx. 2 min. (this step really give the meat extra flavor).
Add in the peppers, sweet potatoes, beans, diced tomatoes, tomato sauce, the remaining ½ tbsp.. Chili powder followed by a pinch of salt and pepper. Stir and bring to a boil. Once boiling, turn down the heat and simmer for 45 minutes -1 hour (until sweet potatoes are soft). Stir in the Kale and simmer for another 5 min.
Serve warm and top with favorite toppings.
