Crock pot recipes are my favorite, I love throwing everything in a pot and just leaving it alone to work its magic. This one is so easy and makes enough pulled chicken for tacos and leftover for salads the next day. You can add anything to top your tacos but I've added some of my favourite toppings in the recipe below.
Ingredients
2 chicken breasts
2 cloves of garlic, minced
1/2 onion, sliced
1 cup chicken broth (you can use vegetable broth as well)
1 tablepsoon cumin
1 teaspoon chili powder
Sprinkle of cayenne (adjust to how spicy you want it)
1/2 teaspoon paprika
Cheese (cheddar or goat cheese)
Wrap, corn tortilla shell, live lettuce
Directions
Place the garlic, onion, chicken, chicken broth, chili powder, cayenne, cumin and paprika in the crock pot on high for 4 hours. Flip chicken over and stir after 2 hours. At 3.5 hours slowly take 2 forks and start pulling the chicken apart in the crockpot. Keep pulling until you have thin strands. Then cover and let the chicken sit pulled apart for the last half hour. When it's finished, it will have soaked up all the juices and ready to serve. Top with cheese and serve on a wrap, corn tortilla shell or live lettuce for a lettuce wrap.
Taco Topping Ideas
Tomato salsa
Make this salsa while your chicken is cooking and store in the fridge. It's best if it has time to sit.
Ingredients
Chopped tomatoes (I use cherry tomatoes or Roma tomatoes)
Quarter chopped onion
Drizzle of olive oil
Juice of half a lemon
Salt and pepper
Cabbage
Shred cabbage in a bowl and drizzle with olive oil, and lime juice. A quarter shredded cabbage would take a quarter of a lime.

Greek Yogurt "Sour Cream"
I use greek yogurt for a sour cream substitute and love it much more! I highly recommend trying it.
Mix all ingredients together.

2 tbsp Greek yogurt
1/4 quarter lime, squeezed
Sprinkle with chili powder
