This recipe I have to give credit to my husband Jay - he is the Chili master in our house. If you are looking for a hearty cozy dinner loaded with tons of veggies and flavour, this is your kind of chili!
Ingredients:
1 tablespoon extra virgin olive oil
2 pounds extra lean ground beef
1 226g container of white mushrooms, chopped
2 yellow onions, diced
2 green bell peppers, chopped
1 red bell pepper, chopped
2 banana peppers, diced
1 156ml can tomato paste
2 jars (698ml) strained tomatoes
2 cans (796ml) diced tomatoes
2 cans kidney beans
1 can black beans
1 can pinto Beans
2 teaspoon cumin
2 tablespoon chili powder
1-2 teaspoons salt
Directions:
In a large pot heat 1 tablespoon of olive oil. Add the yellow onion and sauté until translucent. Add your ground beef, cook until browned. Stir in all seasonings except 1 tablespoon of Chili powder. Sauté for about 1-2 minutes, giving the flavours opportunity to soak into the meat.
Stir in all liquids, beans (drained and rinsed), vegetables and 1 tablespoon of Chili powder. Bring to a boil then reduce heat and let simmer for 30 minutes until all vegetables or soft.
*Optional: Top with green onion, Greek yogurt (or sour cream) and some shredded aged cheddar.
