Arugula
Roasted brussel sprouts
Roasted broccoli
Roasted chicken
Goat cheese
Sunflower seeds
Balsamic reduction
This salad is a quick lunch after a weekend meal prep. With your leftover roasted chicken and vegetables, mix with arugula or spinach then top with pumpkin seeds, goat cheese and balsamic reduction.
My husband and I made this salad for dinner the other day and it was amazing! It not only tasted delicious and used up all my leftovers but it was chock full of important nutrients.
