Ground Turkey Stuffed Peppers


Ingredients:

  • 1lb Ground Turkey

  • 4 Sweet Peppers (yellow, red or orange) cut in half lengthwise.

  • 1 Yellow Onion, diced

  • 2 Cloves Garlic, minced

  • 1 Tbsp. Extra Virgin Olive Oil

  • 1 Can Black Beans

  • 1 Can Diced Tomatoes (28oz)

  • 1 Can Tomato Paste (5.5 oz)

  • 1 Bag Frozen Cauliflower Rice

  • 1 Tbsp. Chilli Powder

  • 1 Tsp. Garlic Powder

  • 1/4 Tsp. Paprika

  • 1/4 Tsp. Ground Cumin

  • Pinch of Salt

  • 1 Cup Grated Old Cheddar Cheese


Directions:


Pre heat oven to 350 F.


Get your peppers ready. Using a casserole dish or deep oven safe pan, lay out the peppers (inside facing upwards).


Heat olive oil in a medium pan. Add you garlic and onion and cook until fragrant. Add ground turkey, stir and cook until brown. Stir in the tomato paste and spices, and cook for another minute. Add the remaining ingredients and cook until the cauliflower rice is soft.


Stuff your peppers with your turkey mixture. Sprinkle cheese on top and cook in the oven for 45 minutes or until the peppers have softened and the cheese is melted.


* This recipe makes enough to stuff 8 peppers, or you can freeze the other half of the filling for another dinner.


* You can also stuff whole peppers by cutting off the top instead of cutting in half length wise.
