Ingredients
Tzatziki
4 Tbs Olive Oil
3 Cloves of Garlic
2 Tbs Lemon Juice
1 half of an English Cucumber shredded
1.5 Cups of plain Greek Yogurt
Salt
Fresh Dill
Greek Meatballs with Tomato and Cucumber Salad
Spice blend
1 Tbs Garlic Powder
1 Tsp Cumin
1 Tsp Oregano
1/4 Tsp Salt
1/2 Tsp Paprika
1/2 Tsp Basil
1/4 Tsp Nutmeg
pepper
Ground Beef or Ground Turkey
1 Shallot (dice half and slice the other half)
Fresh Dill
1-2 Cloves Garlic
1 Egg
1/3 Cup Breadcrumbs
2 Roma Tomatoes
1 Half English Cucumber Diced
2 Tbs Apple Cider Vinegar
Olive Oil
Tzatziki
Using the shredding attachment on a food processor, shred the cucumber. Put the rest of the ingredients in the food processor with a blade attachment and blend. If you are not using a food processor, just chop the cucumber. You can also use a blender or mix together by hand. Top with fresh dill.
Greek Meatballs with Tomato and Cucumber Salad
For the meatballs, mix the spice blend together in a zip lock bag. In a bowl, mix together the ground meat (beef or turkey), all of the spice blend except a tsp, garlic, diced shallots, fresh dill, egg and breadcrumbs. Make meatballs with the mixture and place in a frying pan on the stove at a low setting and a drizzle of olive oil. The timing will differ based on how big your meatballs are.
While the meatballs cook make the cucumber tomato salad. Dice the tomato and cucumbers and put in a bowl. Add the sliced shallots the last tsp of spice blend and olive oil and apple cider vinegar.
When the meatballs are cooked, add tzatziki to the plate and put the meatballs on top, then top with the salad and fresh dill.
