Goat Cheese & Cranberry Stuffed Chicken Breast

Another day, another stuffed chicken. Surprisingly, stuffing chicken is super easy and you won't believe how it can spice up your chicken breast meals you have on repeat.

Ingredients:

  • 2 boneless skinless chicken breast

  • 1 lemon, juiced

  • 2 tablespoon dried thyme

  • 6 tablespoons soft goat cheese

  • 6 tablespoons dried cranberries

  • 1 tablespoon extra virgin olive oil (or avocado oil)

  • Tooth picks

Directions:

Marinate chicken breast in a ziplock bag with lemon juice and thyme for 4-6 hours (or overnight)


In a small bowl, mix together goat cheese and cranberries.


Once the chicken is ready, make pockets in each chicken breast carefully using a knife, you can do this by slicing into the side of each chicken breast and stopping before you cut all the way through. Make sure you leave some chicken breast on the ends as well - you are making a “pocket”.

Pre heat oven to 350 F.


Stuff each breast evenly with the goat cheese and cranberry mixture and secure with tooth picks.

On medium, heat a skillet or pan with oil and cook the chicken breast on each side for approximately 2-3 minutes until browned. Remove from heat and place into the oven (if using a regular pan, transfer chicken into a baking dish) and cook for another 15 minute or until the chicken is fully cooked through.

Remove from oven and serve warm.
