This meal is creamy, flavourful, tender and versatile. You can eat this meal over your choice of noodles, rice, mashed potatoes or mashed cauliflower.
Ingredients
2 lb Stew Beef (omit if vegan)
454g Sliced White Mushrooms (double if omitting beef)
2 Garlic Cloves, minced
1 Yellow Onion, diced
1 Tbsp. Onion Powder
Pinch of Salt & Pepper
2 Tbsp. Fresh Thyme, finely chopped
1 Tbsp. Dijon Mustard
1 Tsp. Worcestershire Sauce (Sub. Tamari Sauce or Soy Sauce)
2 Cups Beef Broth (Sub. Vegetable broth)
1.5 Cup Cashew Cream (or cream of choice)
1 Bay Leaf
2 Handfuls of Chopped Kale (stems removed)
Directions
Add all ingredients to crockpot except kale. Stir and Cook on low for 8 hours. Add kale and cook for 10 more minutes until softened.
Serve warm over your choice of noodles, rice or mashed potato/cauliflower.
