Ingredients
2 Garlic Cloves
4 Chicken Breasts (marinate in a ziplock bag with garlic, lemon juice and oregano)
1/2 Cup of Heavy Cream
1 Tbs Lemon Juice
Splash of white wine
1 Can of marinated Artichokes (170 ML) chopped in half lengthwise
handful of Spinach (approx 1 cup)
Sautee garlic for 30 seconds in a pan and then add the marinated chicken breasts. Cook the chicken on medium low for 4-5 mins and then flip over. After a couple mins, add the heavy cream, lemon juice, splash of wine and bring to a simmer with the pan partially covered for 5-10 mins. Add the artichokes and 1 Tbs of their juice. Continue to simmer until chicken is almost ready and then remove the lid to thicken the sauce. Once almost complete, add your handful of spinach and mix in until wilted.
Spoon the sauce over the chicken in your plate and enjoy!
