Chicken Cutlet Sandwich

This delicious sandwich was re created by my husband from a spot he use to eat in Long Island New York. He impressed me with this dinner the second week we were dating with a side of spinach goat cheese salad. This is our homemade gourmet sandwich, and it is everything you could imagine. The flavours go so well together, I strongly suggest sticking to the recipe and the ingredients.

Ingredients

  • 4 boneless skinless chicken breast (cut in half to make thin cutlets)

  • 1-2 cups Italian seasoned bread crumbs ( add 1 tablespoon of Italian seasoning to plain bread crumbs)

  • 1 egg, beaten

  • 1 ball of fresh mozzarella cheese, thinly sliced

  • 1-2 french baguettes

  • Roasted red peppers (from a jar)

  • Arugula

  • Balsamic glaze/ reduction

Directions

Pre heat oven to 375 degrees and line a baking sheet with parchment paper.


Beat egg in a shallow bowl and pour breadcrumbs onto a plate. Dip each piece of chicken in the egg then the breadcrumbs then lay them onto the baking sheet in a single layer. Bake for 10 minutes, then flip chicken and continue baking for another 10 min (or until chicken is browned and cooked through).


Remove chicken from the oven, and place 1 piece of cheese onto each cutlet. Return to oven and melt, approximately 5 minutes. Remove from oven and let cool slightly.


Arrange Sandwich


Cut baguette in half lengthwise. Put the chicken on the bottom, then spread out the roasted red peppers along the chicken. Drizzle with balsamic glaze and top with arugula. Cut into sandwich size pieces.
