Slow Cooker Thai Curry Soup (Crockpot Meal)

Ingredients

  • 1 tablespoon ginger, grated

  • 2 garlic cloves, minced

  • 1 onion, chopped

  • 2 chicken breasts (approximately 1-1.5 pounds)

  • 6 cups chicken broth *sub vegetable broth

  • 1 red pepper, diced

  • 3 carrots, diced

  • 2-3 crowns of broccoli (depends on size)

  • 1 can of coconut milk

  • 2 tablespoons red curry paste

  • 1 Tablespoon green curry paste

  • 1 teaspoon brown sugar

  • 1 tablespoon rice vinegar

  • Half a pack of rice noodles


Directions

Place all of the ingredients, except the rice noodles, in your slow cooker for 4 hours. Stir every once in a while. After 3-3.5 hours, take out chicken breast and chop up and place back into the slow cooker.


Add noodles in after 4 hours and the pot turned off, it will still be hot enough to cook them and should take 5-10 minutes.


*This can also be done vegetarian by omitting the chicken and using vegetable broth instead of chicken broth.
