Salmon Over Cauliflower Rice

This recipe is an easy stove top salmon recipe and is perfect for 2 salmon filets.



Ingredients

  • Spice blend (1 teaspoon paprika, 1/4 teaspoon basil, 1 teaspoon garlic powder, salt and pepper)

  • 4-5 garlic cloves, minced (roasted or raw)

  • 1 tablespoon olive oil

  • 3 tablespoons apple cider vinegar

  • 1 tablespoon whole grain mustard

  • 1 tablespoon honey

  • 2 tablespoons water

  • 1 cup frozen cauliflower rice


Pat the salmon filets dry and season with the spice blend. I mix the spices together in a ziplock bag and then spread it over the salmon, front and back. Add olive oil to a frying pan on medium low and once hot add your minced garlic or roasted garlic until fragrant (about 30 seconds).


Add your salmon filets to the frying pan, after 2-3 minutes on one side, carefully flip over to the other side. Once flipped, add your apple cider vinegar, whole grain mustard, honey and 2 tablespoons of water. Mix the liquid around the salmon with a wooden spoon and start lightly pouring it over the top of the salmon as it cooks. Keep pouring the juice over as the salmon continues to cook. This side will need another 3-4 minutes depending on how thick your filets are.


Once cooked, remove the salmon from the frying pan and cover to keep warm.

Add 1 cup of cauliflower rice to the pan with all of the juice, garlic etc that is left in your pan. Cook 3-5 minutes until soft and all of the spices have absorbed.


Lay salmon over the rice on your plate and enjoy!
