This tasty one-pot lentil soup has 10 ingredients and super quick to make!

Ingredients
1 Tbs Freshly Grated Ginger
1/4 Tsp Cumin
1/4 Tsp Coriander
1/4 Tsp Paprika
1/4 Tsp Turmeric
1/4 Tsp Garlic Powder
1 Can of Lentils
1 Can of Coconut Milk (leave a small amount at the bottom of the can)
1 Can of Crushed Tomatoes
Salt and Pepper
Sauté the grated ginger in a pot with a little drizzle of olive oil. Add the spices to the pan and stir (a little paste will form) then add the lentils, coconut milk (all but a small amount), crushed tomatoes and 2 cups of water.
Add salt and pepper to taste and bring the soup to a boil on medium-low heat, covered.
Once the soup comes to a boil, take it off the heat. Serve soup with cilantro, squeezed lime slice and drizzle a tsp of leftover coconut milk to your bowl.
