BBQ Season is here! Kabobs are always a good idea. Here's our favourite chicken kabob combination.
Ingredients
2 boneless skinless chicken breasts
3 peppers (red, yellow or orange)
2 yellow onions
3 zucchinis
2 tablespoons avocado oil or extra virgin olive oil
3 tablespoons vegetable seasoning
3 teaspoons dried thyme
1 lemon, juiced
10 skewers
Directions
Cut your chicken breast into bite sized chunks. Do the same with your peppers and onions. And cut your zucchinis 1/4 inch pieces.
In ziplock bags, marinate all of your ingredients. I like to separate the chicken from the vegetables. Split your oil between the bags, same with the seasoning and 1/2 of the lemon juice. Marinate in the fridge for at least 3 hours.
In the meantime, soak your wooden skewers in warm water for 1 hour (if you're using metal, skip this step). This will prevent the stick from burning easily over a hot grill.
When ready, make your kabobs. You can do whatever pattern you'd like. Be creative, and have fun with it.
Grill over medium heat until chicken is thoroughly cooked, making sure you rotate every 5 minutes for roughly 25-30 minutes.
