Crunchy Peanut Butter & Honey Granola

Sometimes you need to mix in a little granola - Homemade granola is super easy and fun to make!

Ingredients:

Dry:
  • 2 cups rolled oats (I use gluten free only oats)

  • 1/4 cup sliced almonds

  • 1/4 cup pumpkin seeds

  • 2 tablespoons chia seeds

  • 1/2 teaspoon cinnamon

  • Pinch of salt (I use pink Himalayan salt)

Wet:
  • 1/3 cup honey

  • 1/3 cup natural peanut butter

  • 1/3 cup coconut oil (melted)


Directions:

Pre heat oven to 300 F and line a baking sheet with parchment paper.


In a large bowl, mix all dry ingredients. In a separate bowl, mix all wet ingredients. Pour the wet ingredients into the dry ingredients and stir until fully combined.


Spread out in a single layer on a baking sheet and bake 25-30 minutes. Remove from oven and let cool completely. Once cooled, crumble the granola and transfer to an airtight container for storage.
