Burrito Meat

This dish can be enjoyed in so many different ways. Add this to a tortilla, stuff it in peppers, or add it to nachos!



Ingredients

  • 1/4 onion, chopped

  • 1-2 garlic cloves, chopped

  • Ground beef (around .5 kg)

  • 1.5 tablespoons cumin

  • 1/2 teaspoon corriander

  • 1 tablespoon chili powder

  • 3/4 can of black beans

  • 1 cup crushed tomatoes

  • 1/2 cup of brown rice

Cook rice to it's instructions on their box. Sauté onion and garlic on low in a frying pan until soft, 30 seconds to 1 minute. Add the ground beef and let cook for a few mins, then add spices. Once the meat is almost cooked, add the beans, crushed tomatoes and rice and let simmer until meat is fully cooked and juices have started to evaporate.


Add the meat to a tortilla with toppings of your choice (sour cream, tomatoes, cilantro) or you can add it to sheet pan nachos. I like to stuff the burrito meat in peppers.

Ingredients

  • 4-5 peppers

  • Burrito meat (see recipe above)

  • Cheddar cheese

Directions

Heat oven to 350 and cut the tops off of 4-5 peppers (amounts will differ with size of peppers). Add the peppers standing up to a glass oven safe pan and let them cook for 20 minutes. During this time, make your burrito meat. Take out the peppers and using a spoon, carefully add your burrito meat to the peppers. Top with a generous amount of cheddar cheese. Put the stuffed peppers back in the oven (standing up) for 10 minutes or until cheese is melted to your liking.


Take the peppers out and cut down the middle very carefully, once open, you can add more cheddar cheese and sour cream to the inside.
